Diamond Balls

If you are anything like me you’re constantly thinking of recipes and snack ideas to feed the never ending hunger that (my) children seem to have. You also want to feed your children relatively healthy choices without too much sugar, additives and numbers. Yuk!
Shop bought snacks are fine but I prefer to make as much home made food as possible.
I have been fine tuning this recipe for a while now and I have found the perfect balance with no sugar. Win!

Another thing I’m constantly thinking of is the mess my children make when they eat and how I can minimise that mess. As much as possible. Every day. I even fantasise about a magic tablet that they can take with all the right levels of carefully balanced nutrition in one small mess free tablet. Just imagine that. No clean up after dinner ever again. I hope some one very clever and important is listening!
Because of this reason I have developed the humble muesli bar into ‘Diamond Balls’ that can be popped into the mouth and eaten in one bite! No crumbs, no mess! A parenting ‘aha’ moment right there.
All’s left is to bake and enjoy!

Now I make these in my Thermomix TM5 (the ‘Therminator’) so if you haven’t got one you will need to get your ass out and buy one. Just kidding! The only difference is it will take you a bit (ok a lot!) longer to chop the dried fruits up and mix everything by hand. Ain’t no mama (with a babe in one arm) got time for that.

Let’s get started!

Preheat the oven to 170 degrees Celsius.
I use my thermomat to bake on but you can just line a tray with baking paper, old school Betty. (I was Betty 3 weeks ago!)

Firstly chop the dried fruits
30g dried apple speed 6 for 10-15 seconds
90g dried apricots speed 6 for 10-15 seconds
40g banana chips speed 6 for 5-10 seconds
30g dried pineapple speed 7 for 10-15 seconds

Then add
175g rolled oats
40g rice bubbles (for a party treat I used coco pops!)
60g plain flour
40g shredded coconut
40g chia seeds (black and white)
40g pumpkin seeds
40g sunflower seeds
30g dried cranberries
30g gogi berries
50g yoghurt covered sultanas (or plain)
40g almonds
40g cashews
Mix on reverse, speed 4 for 20 seconds or until thoroughly combined.

You can melt all of the below ingredients in the Thermomix first before the dry ingredients but I prefer to melt it in the microwave then add it to the mixture so that it drips down through the dry mix and doesn’t get stuck at the bottom.

125ml butter, reduced salt
60ml almond butter (preferably home made!)
60ml cashew butter (I taste much better without additives and numbers!)
1tsp vanilla
125ml honey
Once melted and combined pour this over the dry ingredients then mix on reverse speed 3 until all ingredients are evenly mixed.
You may need to scrape down the sides with the spatula and mix again.

Remove from mixing bowl, roll into small bite sized balls and place on prepared baking tray.
Bake in the oven for 20-25 minutes for softer chewy balls or 30-35 mins for crunchier ones on the top shelf of the oven (to prevent the bottoms from browning) and I like to turn the tray turn at the 15 min mark.
Once lightly browned remove from the oven immediately and leave to cool.

Ta da! You’ve done it!

These Diamond Balls are addictive particularly because they are bite sized…so good luck stopping at one!
Store in a sealed container, if they last that long.

These are perfect for lunchboxes or after school snacks, actually my kids get into them as soon as they wake up so make sure you hide a couple for yourself!

Of course if you prefer to make the traditional bar form simply press firmly and evenly into a large rectangular baking tray with extra paper hanging over the sides (to make it easier to remove after cooking) and cool completely before cutting neatly into bars.
